I’ve recently fallen in love with chia seeds. Yes yes, I know, I’m late to the party. If I’m honest, I’m often late because I don’t want to jump into the latest fad and Chinese medicine dietary therapy has done my body and many of my clients, the world of good.
So when I hear about cold chia seed puddings for breakfast, my Qi shudders and I remember the mantra of ‘warm is best’. And this totally makes sense to me… because where in nature would we be naturally eating cold things on a hot day?
So, after all this time, I decided to give them a regular go (after my hot breakfast of course) and it turns out they’re pretty damn awesome.
I made a large batch and had a couple of days in a row prepared – nice. They’re the simplest lil pudding to make.
Simply take 3-4 tbsp of Chia seeds and mix with 1 cup of milk (either coconut, almond, kefir, soy – whatever you fancy) and mix that together.
Then you could add some flavouring like 1tsp of vanilla and 2 tbsp of maple syrup. Mix it altogether and let it soak overnight and divide into ramekins. You can keep multiple in the fridge and take one out at the start of the day so it’s not too cold before you eat it.
Before eating you can then add your fave fruit on top with some coconut shavings or a sprinkle of seeds and some organic full fat greek yoghurt. It’s such a tasty dessert and filled with protein, fibre and omega-3 fatty acids and antioxidants.
When I made my puddings I also sliced up a prune and put it through the mixture.. However you could do a dried fig sliced up or you could add some nuts or seeds to the soaking process too.
They are just the best and help you to get regular and stay regular, whether you need clearing out or bulking up – they’ve got you!
