Soul warming summer days has arrived, and it’s time to shred the layers – I’ve taken the opportunity to bring out my summer dresses, and although it’s still a bit early I do look forward to leaving the jacket and jeans at home.
Hopefully you have been enjoying a winter of stews, soups and broth’s as I have been preaching about the boundless goodness in these nourishing foods though out winter. Now as the temperatures rise the warming foods isn’t as appealing, right? So, what to do now? Well, I have some good ideas on how to incorporate the essential gut and immune support that I have been encouraging though the winter months. Because, sadly for some of us the work still needs to be done for the ongoing allergies, IBS symptoms and yes – there are still plenty of mucus and runny noses.
Daily consumptions of these foods (broths and gelatin) is something I would call, “using food as medicine every day” – so please mums and dads, ladies and gentlemen – work your daily magic at home – here’s a few ideas:
Quinoa salad with broth
Cooked quinoa (boiled similar to how you’d do rice: 1 cup quinoa to 2 cups water) Once cooked add a tablespoon of bone or chicken broth and add to the hot drained Quiona, mix well in a bowl.
Add the Quiona to a bowl full of mixed greens (rocket, spinach, cooked Kale, chicory…) mix well.
Then add the following:
1/2 cup Goats cheese Feta (full fat please)
A bunch of Asparagus lightly steamed or grilled & chopped in half (or as you like)
A handful of cherry tomatoes – if you want it to look extraordinarily fancy you could get a mix of red and yellow tomatoes.
Finally sprinkle with sunflower seeds, fresh parsley, a squeeze of lemon and a good dash of olive oil.
Smoothie with gelatin (Great lakes Gelatin is Kosher & grass fed – the only one I recommend)
1 cup of Coconut milk or almond milk (use more or less to get your favourite thickness you can also add water)
1/2 cup (or more) of Berries
1 tablespoon of chia seeds (optional) – great for any bowel issues especially constipation.
1 tablespoon Great lakes gelatin powder
– Mix together in a blender – and enjoy with your friends or family. Kids love this too!
